Simple Thick Tomato Sauce

Thick because it's cooked to death
Over time it's been getting less simple.
Olive Oil
1/2 White or Yellow Onion - chopped
2-3 cloves Garlic - smashed
1 14.5 oz. can Diced Tomatoes
1/4 c fresh Basil chopped
1 tsp dried Oregano
pinch Sugar
2 small Bay Leaves
6 oz can tomato Paste (optional)
1 c water (to go with the Tomato Paste)
1/4 c fresh Italian Parsley
Red Wine Vinegar
Salt and Pepper to taste
Saute Onion and a few minutes later add the Garlic in Olive Oil till Onions are soft
Add Tomatoes, Basil, Oregano, Sugar, and Bay Leaves, Tomato Paste, and water,
and cook covered on medium to low for approx 20-30 minutes until sauce is thickened stirring occasionally
Add Italian Parsley and Red Wine Vinegar to taste. Cook another 5 minutes.
Remove Bay Leaves and serve over pasta or toasted french or sourdough bread.
