Potato Onion Tomato Mushroom Saute


Similar to the others, but a little different.

Olive oil
2 White or Yukon Gold Potatoes - chopped
Cayenne Pepper
1/2 Red Onion - diced
3 Fresh Tomatoes - diced
1/2 pkg White Button Mushrooms - chopped
3 Garlic Cloves - smashed or minced

Oregano
Basil
Black Pepper
Salt

Water
sm Plain Yogurt
handful Cilantro

Coat bottom of a skillet with olive oil. Cook potatoes with cayenne pepper 5-10 min till golden
Add onions, cook for 4-5 min.
Then garlic - cook 1 min
Then add mushrooms and cook till soft.
Add tomatoes, oregano, basil, salt, pepper.
Then water to make a sauce
Cook 7-8 min covered, and then 2-3 min uncovered.
Add the yogurt, then cilantro
Cook uncovered to thicken
Adjust salt and pepper

Serve over rice
Garnish with toasted chopped nuts and more cilatro
