Pomodoro Sauce with Garlic and Oregano   


Pomodoro (Tomato) Sauce is a very basic sauce with just a few ingredients.

It usually has tomatoes, onion, garlic, basil, salt and pepper
I decided to substitue oregano for basil and left out the onion just to get the full does of garlic.

The results are very yummy.


Local olive oil
3-4 large garlic cloves smashed and chopped
several (around 6-10) small sweet tomatoes (e.g. cherry, grape) sliced and seeded
2 T water
2 T (plus) fresh oregano (yes it has to be fresh) chopped
salt and pepper
1/4 c Parmesan

Saute garlic for 2-3 minutes stirring continuously to prevent burning
add tomatoes and
add the water - you can steal it from the pasta water since you should be cooking the pasta right now.
and cook for 4 or so minutes while tomatoes soften
during this time add oregano, salt and pepper.  You need to add enough salt to offset the tomato flavor some.

Serve over a flatish pasta like Butterfly.
