Pomodoro Sauce with Mushrooms, Onions, and Garlic
Pomodoro (Tomato) Sauce is a very basic sauce with just a few ingredients a guideline that I tend to violate.
It usually has tomatoes, onion, garlic, basil, salt and pepper
This one has mushrooms also and uses red onion which is sweeter and you do not have to add sugar.
The results are very yummy.
This serves 3-4, you can easily increase the quantities.
3 Tbsp Local olive oil
1 yellow or white onion
2-3 garlic cloves smashed and chopped
1 16 oz package sliced mushrooms (or slice them yourself for max freshness)
1 32 oz can diced tomatoes
1 6 oz can tomato paste
1 Tbsp dried basil or 1/4 c fresh basil
1 tsp dried oregano or 1/8 c fresh oregano (can be more)
1 tsp dried thyme
pinch chipotle pepper (optional)
fresh ground black pepper
1/4 c chopped Italian Parsley
1/2 tsp salt (more if you like)
On medium (not high) heat saute the onion for 4 minutes, add the garlic
and saute for another 2 (or so), then add the mushrooms and toss them
around the pan to coat with remaining oil and cook for another 5 (or so)
minutes. Add the tomatoes and herbs. and let it cook uncovered
for 15 minutes until the sauce thickens and becomes delicious. You
can let it cook for a lot longer for maximum flavor blending.
Serve over pasta or polenta. It's good enough to just eat on its own.
