My Pomodoro Sauce(s)


Just because there are lots of them I have to add more.

This is bastardized from many many sources.  Silver Palette gets the credit for adding the Red Wine Vinegar at the end.


Ingredients

olive oil
1 onion chopped - your choice of color - flavor changes depending on what you choose
2 cloves garlic smashed

1 lg can diced tomatoes

herbs
1/4 c fresh basil chopped
1/2 heaping tsp dried oregano
1/2 heaping tsp fresh thyme (use 1/4 of that amount if dried)
1/4 c fresh Italian parsley - chopped
salt
pepper

3-4 splashes red wine vinegar
or
small number of capers



Methods

Smash the garlic - Really!  You must try this method - much more fun than pressing it.

Make your life easier pre-mix the herbs together




Mix the onion and garlic together and then saute in the olive oil till soft

Add tomatoes stir and then add herbs and salt and pepper.

Bring to boil then reduce heat, cover, and simmer (stirring occasionally) for around the time it takes to boil water and cook pasta (or longer - longer is better). 
Uncover, stir, and correct seasoning.
Add either 3-4 splashes of Red Wine vinegar OR a few capers (not both)



bring to boil, then reduce heat and cover and simmer
after simmering - it's ready
plated - pour over cooked pasta

Serve with salad and some nice bread.  Enjoy.
