Mexican-like Beans
Basically this is taking a bunch of beans adding some other things
to a pot and cooking it for 2 hours.
1 1/2 c. Pinto beans (more or less)
1 can Chicken broth (can use more)
1/2 White onion - chopped
1 can Tomatoes - diced, (fire roasted is nice)
1/2 c. Cilatro - chopped
1/2 Lemon - squeezed (can be less)
1/2 Jalapeno - chopped
lots of Pepper or Chipotle pepper
Salt as desierd
Water as needed
Bring all contents to a boil then simmer for 2 hours stirring
occasionally, adding water as needed.
Can also add
1 t. Cumin
Salsa verde or red
