Chicken Mushroom Saute


The problem with making up dishes is remembering what you did.

Olive Oil - use good local sources for best results (imported is not a plus with Olive Oil)
3 deboned bone Chicken Thighs cut into bit size pieces
1/2 Onion chopped
3 cloves Garlic
6-10 (or more) Button Mushrooms sliced
Some number of (8-12) Grape Tomatoes sliced or 1 can diced tomatoes
some Chicken Broth (approx 4 oz)
1-2 Tbsp butter
1/4 c (around that) fresh Italian Parsley chopped (dried ok if necessary)
1 Tbsp dried Basil (if you use fresh use 3-4 times as much)
1 tsp dried Oregano
2-3 sprinkles of dried Thyme
1/4 tsp Salt
1/8 tsp Pepper


Heat some olive oil, cook chicken and then set aside.
Heat a little more oil if necessary, saute onion and garlic till soft
Add mushrooms and saute a little while longer (3 minutes more??)
Add the tomatoes - saute two more minutes
Add everything else including the set aside chicken
Add enough chicken broth to make a nice sauce
(The butter is to thicken the sauce)

Lower heat and simmer for 15 minutes or so - make some rice and a salad in the mean time.
Near the end taste and correct seasoning to taste (which usually means adding more salt and pepper if you like)
