Spanish Rice

Olive Oil
1 med Onion chopped
3 cloves Garlic smashed and minced
1 c. Bazmatti Rice
1 can (1 3/4c) Chicken Broth
1 tb Tomato Paste
1 tb. dried Basil
1 t. dried Oregano
1 t. dried Thyme
Salt
Pepper
Optional
Chicken Sausage
Parsley
If using sausage, cook it first and set aside.
Heat olive oil
in med sauce pan (or deep sided skillet) using med-high heat and add
onion and garlic. Saute for 3 minutes, add rice, saute for 2 more
minutes till well coated and turning golden. If using, add
optional sausage, saute 1 minute. Add broth and tomato paste,
then spices. Bring to boil, then reduce heat and cook covered for
20 minutes.
