Pomodoro Sauce with Mushrooms, Onions, and Garlic
Pomodoro (Tomato) Sauce is a very basic sauce with just a few ingredients which I tend to violate.
It usually has tomatoes, onion, garlic, basil, salt and pepper
This one has mushrooms also and uses red onion which is sweeter and you do not have to add sugar.
The results are very yummy.
This serves 1-2, you can easily increase the quantities.
Local olive oil
1/4 red onion
2 garlic cloves smashed and chopped
1/2 package sliced mushrooms (or less)
1/2 can diced tomatoes
1 tdp dried basil
1/2 tsp dried oregano
pinch chipotle pepper
fresh ground black pepper
chopped Italian Parsley (optional)
On medium (not high) heat saute the onion for 3 minutes, add the garlic
and saute for another 2 (or so), then add the mushrooms and toss them
around the pan to coat with remaining oil and cook for another 5 (or so)
minutes. Add the tomatoes and herbs. and let it cook uncovered
for 10-15 minutes until the sauce thickens and becomes delicious.
Serve over pasta or polenta. It's good enough to just eat on its own.
