Killer Salad
I love making tasty, somewhat complicated, slightly bizarre green salads
Lettuce Mix
Any combination of
- Ready Pac Parisian mix
- Fresh Express Italian
- Fresh Express 5 Lettuce Mix
- Spinach
- or just about anything else that isn't boring Iceberg
Any combination of the following
Hass Avocado - sliced
Mini carrots optionally sliced
Mushrooms - button or otherwise - sliced
Sweet grape tomatoes
Olives - black or green - I like black as green is really strong
Green onions
Sliced apples
Sliced pears
Tangerine or madarin orange pieces
Jicama
Snap peas
Chick peas / garbanzo beans
Cauliflower - broken up
Corn
Peppercioni
Sundried tomatoes
Various nuts - almonds, walnuts, macadamia, pine - optionally sliced or chopped
Various seeds - sunflower, pumpkin
Feta cheese crumbled
Parmesan cheese grated
Hard boiled egg - sliced
Chicken - cold
Crispy onions - Seneca or other, Frenches only if you must
Crasins (Dried Cranberries) - you can also use raisins, we don't
because we have dogs and don't want to risk dropping any raisins
(Trips to the doggy ER mess up dinner plans,
even having to stop and Google if one dog-eaten raisin is ok (it is) is
a pain)
Croutons
- Semi Freddies - Garlic
- Nob Hill Full Circle - Seasoned
You can also use (I don't out of personal preference)
Bell pepper
Cucumber
Baby Corn
Bacon
bits (if I ate bacon I would make the bacon myself and use 1" x 0.5"
strips instead of over-salted, strange little bacon-like substances)
Other Suggestions via Facebook
Elf:
Green (English) peas
Pomegranate seeds
Broccoli (forgot that one) - cut up
Artichoke hearts (also forgot that one)
Bean - pinto, black, kidney
Celeste:
Hearts of Palm
Joan:
feta
glazed walnuts
lettuce/bay shrimp/avocado combo
Dressing
We are addicted to Good Seasons Italian and I really need to
figure out how to make a better one as the one we use is mostly sugar
and salt which is why it tastes so good.
Newman's is good
Honey Mustard is good
I love Ranch but it is too caloric and hides the yummy flavors of the salad
Other Dressing Suggestions
Elf:
Lemon juice and a little pepper
Pico de gallo
Lori:
Fig-infused balsamic vinegar
Grapeseed oil or
orange infused olive oil
1 T hummus
Mrs. Dash non-salt
seasoning to taste
1 to 2 T maple syrup.
Whisk, and yum!
Or
Never underestimate peanut butter in salad
dressings!
Peanut butter
a little orange juice
garlic
soy sauce
small amount of honey
dab of catsup
and you got a great dressing
for a lettuce, mandarin orange and avocado salad! Apples and craisins
go well with it too.
Joan:
Soy Vay (combine with dried cranberries, feta, and glazed walnuts)
