Hash Browns Plus

For a delicious morning

onion and garlic (optional)
1-2 yukon potatos grated (and don't peel them)
olive oil
a little fresh oregano

½ avocado
small tomato sliced and chopped
some salsa
cheese grated - (optional) Vermont Cheddar, Jack, or Dubliner

heat the oil in a skillet
If using onion, saute them first
stir in potatoes.
spread the potatoes out thinly in the pan
add salt pepper oregano
saute on each side till brown and crunchy
add more oil if pan gets dry as that's the only way to get the crunchiness

put on a plate
top with avocado, tomato, salsa and grated cheese
