Gai Pad Bai Gaprow

(Thai basil chicken stir fry)

This recipe is from

4 boneless chicken thighs cut up

1 Tb vegetable oil

4 garlic cloves chopped fine

2 small fresh chilies (jalapeno or serrano. A thai pepper would likely be too hot)

1/4 c chicken broth (or water)

1 Tb fish sauce

2 t sugar

1 t soy sauce

1/4 t freshly ground pepper

1 1/2 c fresh basil, calls for Holy Basil, but Sweet Basil works fine

2 Tb lime juice to taste

Heat oil, add garlic, stir fry till golden. Add chicken and cook stirring constantly until chicken is opaque white: 3-4 minutes.

Add chilies, broth, fish sauce sugar, soy sauce, and pepper. Stir-fry until combined.
Add basil and stir-fry 30 seconds. until basil is wilted but still green. Stir in lime juice.

Serve over rice.
